
Cauliflower Romanoff
A cheesy cauliflower dish that's incredibly light and tender.

Ingredients
- 2 small heads of cauliflower, chopped into bite size pieces
- 1/3 cup cottage cheese
- 2/3 cup sour cream
- 3 tbsp chopped shallot or onion, chopped
- 2 tsp fresh dill
- 1 tsp salt
- 1/4 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375F/ 190C.
- Into a greased baking dish add chopped cauliflower, diced shallots or onions, cottage cheese, sour cream, salt, and fresh dill. Mix together until fully incorporated then top it off with some more fresh dill and shredded cheddar cheese.
- Cover it with parchment paper or aluminum foil and place in the oven to bake for 35 minutes. Enjoy!
