Keto Baked Mac and Cheese

- 2 heads cauliflower chopped to bite size-pieces
- 1 1/2 cups heavy cream
- 1/2 cup unsweetened almond milk
- 1/2 cup shredded cheddar cheese
- 1 tsp salt
- 1/4 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 cup shredded cheddar cheese for topping
- freshly chopped parsley for garnish
Instructions
- Fill a large pot with a few inches of water and place it over medium-high heat. Add a few pinched of salt and chopped cauliflower. Then, cover it with a lid to boil for 15 minutes.
- Preheat the oven to 350F/ 165C.
- While that’s boiling, in a small sauce pan over low heat, add heavy cream, unsweetened almond milk, mix it together to combine and add onion powder, garlic powder, black pepper, and salt.
- Whisk it very well until all the spices have been incorporated, then add shredded shedder cheese. Whisk it together until the cheese has completely melted into the liquid.
- Drained the water from the cauliflower pot and pour the cheese sauce into the cauliflower pot. Mix it together and then add it into a baking dish. Top it off with ½ a cup of shredded cheddar cheese.
- Place it in the oven for 25 minutes or until the cheese has melted and starting to get some color. Enjoy!
