Fill a large pot with a few inches of water and place it over medium-high heat. Add a few pinched of salt and chopped cauliflower. Then, cover it with a lid to boil for 15 minutes.
Preheat the oven to 350F/ 165C.
While that’s boiling, in a small sauce pan over low heat, add heavy cream, unsweetened almond milk, mix it together to combine and add onion powder, garlic powder, black pepper, and salt.
Whisk it very well until all the spices have been incorporated, then add shredded shedder cheese. Whisk it together until the cheese has completely melted into the liquid.
Drained the water from the cauliflower pot and pour the cheese sauce into the cauliflower pot. Mix it together and then add it into a baking dish. Top it off with ½ a cup of shredded cheddar cheese.
Place it in the oven for 25 minutes or until the cheese has melted and starting to get some color. Enjoy!
