Keto Friendly Crepes

I love the versatility of crepes. The nature of crepes makes it easy to stuff them with anything. I’m a sweet tooth so I had learned how to make regular crepes when I was in college living on my own. 

They can be sweet or savory depending on your mood or morning taste buds. These keto friendly crepes look and feel just like the regular high carb crepes we all love. 

Keto Friendly Crepe Ingredients: 

  • 4 large eggs

  • 1/2 cup sour cream

  • 3/4 cup almond flour

  • 2 tbsp granulated Monkfruit sweetener

  • 1/4 cup unsweetened almond milk

  • 1 tsp vanilla extract

  • Pinch salt

  • Oil or butter for the pan

Crepe Making Tips: 

Making crepes can seem challenging at first but I promise you, it’s worth the try. All crepes are fragile and hard to flip so it’ll take a little practice to get them just right. 

Every single time I make them, the first one turns out ugly, delicious, but UGLY! That is totally ok, we all need to get warmed up, right?! So here are my tips for your keto friendly crepe making success: 

Mixing the batter:

The batter is the most important part of this recipe. We need to make sure it is smooth (without almond flour lumps) and runny. 

If you find yourself mixing and mixing but can’t get the right consistency, throw it in the blender for a few seconds.

Use minimal oil or butter in the pan: 

I find that using a non-stick pan and buttering it only in the beginning helps me get consistent looking crepes. If you add too much butter or oil, your batter wont be able to stick to the pan correctly and will not form a complete round shape.  Also, using too much oil or butter will cause your keto friendly crepes to burn easily.

Add the batter and swirl quickly:

You want your crepes to be as thin as possible which means that you’ll need to add minimal amount of batter to the pan for each crepe. 

I find that pouring the batter to the center of the pan with my right hand and lifting the pan with my left immediately after pouring to make a swirl motion, helps the batter spread evenly and form the classic round crepe shape.

 

Let the first side cook completely:

You’ll need a little patience with this part. Letting the crepe completely cook before flipping is essential for the success of your flipping.

 If you flip it too soon It’ll brake. I always wait until the edges are browning so I’m completely sure they are done.

How to Serve Your Keto Friendly Crepes: 

The possibilities are endless with this recipe. You can serve make it with sweet or savory fillings and it’ll be delicious either way. You could fill it with my Low Carb Strawberry Jam or Blueberry Compote and some whipped cream. 

You can also make it savory by making scramble eggs and sausage or any low carb vegetables you have available. I find that spinach and any melted cheese are always a good combination for a filling. 

Storing your crepes:  You can store these keto friendly crepes in an airtight container in the fridge for days. Making it perfect for meal prepping!

Keto Friendly Crepes

These keto friendly crepes are a great versatile base to have in your fridge all week.

Equipment

  • skillet
  • mixing bowl

Ingredients
  

  • 4 large eggs
  • ½ cup sour cream
  • ¾ cup almond flour
  • 2 tbsp granulated Monkfruit sweetener
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • Pinch salt
  • Oil or Butter for the pan

Instructions
 

  • In a large mixing bowl, beat 4 eggs. 
  • Mix in the sour cream, unsweetened almond mil and vanilla extract. 
  • Once all the wet ingredients are well combined, whisk in the monkfruit sweetener, almond flour and salt. Whisk until the batter is smooth. 
  • Prepare a skillet on medium heat. Butter or oil spray very minimally. 
  • Pour or scoop your crepe batter on to the skillet. Once the batter hits the skillet, lift it and do circular motions until the batter forms a round shape. Place back on the stove and wait until it's cooked through before turning it over. 
  • Once cooked on both sides, place aside and repeat the process until all your crepes are cooked. Enjoy! 

Notes

If your batter is lumpy you can put in a blender for a couple of seconds.
