Making your own sausage is not as hard as anyone thinks! All it takes is one bowl and your willing hands to mix, mix, mix. Not a complicated process for the best sausages you’ve ever had!

Homemade Italian Sausage

Ingredients
- 1 lb ground pork with a good amount of fat (can substitute ground chicken, turkey or meat of choice)
- 1 tbsp finely minced garlic
- 2 tbsp finely chopped fresh parsley
- 1 tbsp dry red wine
- 1 tbsp paprika
- 2 tsp salt
- 1 1/2 tsp coarsely cracked black peppercorns
- 1 tsp coarsely cracked fennel seeds (toast in a dry skillet for a minute or two until fragrant for maximum flavor)
- 1 tsp onion powder
- 1/2 tsp red pepper flakes (omit if you want a mild sausage)
- 1/4 tsp dried thyme
- 1/4 tsp dried rosemary
- 1/4 tsp dried oregano
- 1/4 tsp dried ground sage
Instructions
- Place the ground meat in a bowl and add all remaining ingredients. Use your hands or fork to thoroughly combine the ingredients.
- Wrap and chill for at least 6 hours before using, preferably overnight for best flavor.
- Make into sausage paddies and cook on the grill. Enjoy!
Notes
The sausage will keep in the fridge for 3 days or can be frozen, well wrapped, for up to 3 months.
