1lbground pork with a good amount of fat (can substitute ground chicken, turkey or meat of choice)
1tbspfinely minced garlic
2tbspfinely chopped fresh parsley
1tbspdry red wine
1tbsppaprika
2tspsalt
1 1/2tspcoarsely cracked black peppercorns
1tspcoarsely cracked fennel seeds (toast in a dry skillet for a minute or two until fragrant for maximum flavor)
1tsponion powder
1/2tspred pepper flakes (omit if you want a mild sausage)
1/4tspdried thyme
1/4tspdried rosemary
1/4tspdried oregano
1/4tspdried ground sage
Instructions
Place the ground meat in a bowl and add all remaining ingredients. Use your hands or fork to thoroughly combine the ingredients.
Wrap and chill for at least 6 hours before using, preferably overnight for best flavor.
Make into sausage paddies and cook on the grill. Enjoy!
