In a sauté pan over medium-low heat, add 2 tablespoons of olive oil, ⅓ cup of chopped onions, and 2 minced garlic cloves. Mix it together then add 3 teaspoons of tomato paste and mix to combine. Cook for 30 seconds then add 1 and a half pounds of ground beef. Mix everything together to prevent burning the onion and garlic and incorporate the tomato paste with the meat.
To season it, add salt, black pepper, paprika, and Italian seasoning. Mix to combine and let it cook completely then transfer it to a baking pan (I used a 9 inch round non-stick pan) but you can use any shape you like. Make sure to flatten the meat and add mozzarella cheese. Spread it evenly and add your pepperoni.
Bake for about 15 minutes or until the cheese has completely melted. Now sprinkle some freshly chopped parsley on top and enjoy!
