8ozstevia sweetened dark chocolate, melted (or melted unsweetened cacao mass with 1/3 cup powder sweetener mixed in)
Instructions
In a large mixing bowl, add almond flour, salt, chopped toasted pecans, a ¼ cup of heavy cream, sweetener (I’m using erythritol), maple extract, vanilla extract, and melted unsalted butter.
Mix everything together until fully combined and the almond flour is well hydrated. Scoop the dough with a cookie scooper (mine is equivalent to a 2-teaspoon measurement) and create some spheres by pressing them together with your fingers. Make sure they’re nice and round before placing them in the freezer for at least 2 hours.
Melt the chocolate. Remove them from the freezer and immediately begin covering them with chocolate. Use a fork and completely bury them in the chocolate then dig them out and shake off any excess chocolate. Place them on a parchment-prepared flat surface that fits into your fridge or freezer.
Decorate them with some more chopped toasted pecan or a whole pecan. To make sure the topping sticks it must be placed or sprinkled before the chocolate begins to set. Place them in the freezer for 10 minutes and they’re ready to be enjoyed!
