Preheat your oven to 350F/176C.
Add shredded mozzarella cheese and cheddar cheese to a parchment-prepared baking pan. Make a circle shape to create that signature tortilla look. Then, bake at 350F or 176C for 8 minutes or until melted and slightly browned on the edges.
While that melts, add olive oil to a frying pan over medium heat. Then, add chopped bell peppers. Season it with a pinch of salt and a crack of pepper, then add 2 eggs and mix it all up until it cooks.
Take your cheese out of the oven and let it cool for 5 minutes and dab a paper towel on top to remove excess fat. Then let it cool down until it’s slightly warm and pliable.
Add the scrambled eggs to one half of the circle with chopped tomatoes, 1 slice of crispy bacon, a few slices of avocado, and cilantro. Then fold it, cut it and enjoy your breakfast quesadilla with a dollop of sour cream, more avocado, and cilantro.
