In a large sauté pan, over medium-low heat, add olive oil, chopped shallots, minced garlic, and let it cook for 1 minute or until softened while stirring occasionally. Then add bell peppers, spicy paprika, black pepper, and salt. Sautee until well combined and let it cook for 5 minutes.
Serve with a sunny side egg, chopped tomatoes, half an avocado, and garnish it with freshly chopped cilantro. Enjoy!
