1/2cupalmonds
1tbsplemon juice
1/4cupolive oil

Garnish
1/2cup fresh mozzarella cheese
2largeslices of bacon
Instructions
Preheat your oven to 350ºF (176ºC).
In a parchment prepared baking sheet, place your cut zucchinis, drizzle with olive oil, sprinkle slat, and freshly ground black pepper. Toss them around to evenly coat them and roast in the preheated oven for 30 minutes.
To make the green sauce, in a blender, add parsley, garlic, salt, olive oil, lemon juice, and almonds. Blend until smooth.
To prep the bowl, add half of your fresh mozzarella to the bottom of the bowl, zucchini, topped with green sauce, bacon, and fresh thyme. Enjoy!
