These chicken nuggets are absolutely delicious, fun to eat, and totally filling!

Ingredients
  

  • 2/3 cup almond flour
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp paprika
  • 1 1/2 tsp granulated garlic
  • 2 lbs ground chicken
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 1/4 tsp black pepper
  • 1/2 tsp salt

"Breading"

  • 1 cup almond flour
  • 1/3 cup parmesan cheese
  • 1/2 cup crushed pork rinds
  • 1/4 tsp black pepper
  • 1 tsp paprika

Instructions
 

  • Preheat oven to 350F
  • Add ground chicken, parmesan cheese, one egg, onion powder, garlic powder, paprika, salt, almond flour, and black pepper to a mixing bowl. Combine until everything is well incorporated and scoop the chicken mixture into your palms to form the chicken nuggets. Place them on top of parchment paper until they're all shaped.
  • In a bowl add almond flour, parmesan cheese, crushed pork rinds, paprika, and black pepper. Combine and start the "breading" process. Chicken nuggets should be fully covered and placed on top of a parchment paper prepared sheet pan.
  • Bake on the oven at 350F for 25 minutes or until cooked through. You can check them at the 25-minute mark by cutting one in half. If you have uneven sizes, cut the largest one to check if it’s ready.
  • Serve with your favorite low carb dipping sauce and Enjoy!
