2cupsheavy cream
9ozsemi-sweet stevia sweetened chocolate chips
Instructions
In a microwave-save bowl, place 1 1/4 cups of heavy cream and microwave for 2 minutes. As soon as it comes off the microwave, add 6 ounces of chocolate chips and let it sit for 1 minute without stirring.
Whisk heavy cream and chocolate chips gently until fully combined. Let it cool at room temp for 2 hours. Once it's cooler and has become thicker, add 1/2 cup of chopped hazelnuts and mix until evenly distributed inside the ganache.
Cover it with a lid or cling wrap to refrigerate overnight. Scoop 1 tbsp and form a flat circle. Insert whole hazelnut and form a ball. Immediately roll the ball onto the remainder chopped hazelnuts until fully covered. Repeat until all truffles have formed. Freeze for 20 minutes or until ganache has hardened.
In a microwave-save bowl, place 3/4 cup of heavy cream and microwave for 1 minute. As soon as it comes off the microwave, add 3 ounces of chocolate chips and let it sit for 1 minute without stirring. Whisk heavy cream and chocolate chips gently until fully combined.
Submerge 1 truffle at a time, fetch it out sliding a fork underneath and shaking out excess chocolate before placing them on top of parchment or wax paper. Place in the freezer for 40 minutes and Enjoy!
Notes
