Clean and hollow your mushrooms. Place them on a parchment prepared baking sheet.
Preheat the oven to 350F/176C
In a medium-size pan over medium heat, add olive oil and Italian sausage. Cook through and add 1 tbsp of tomato paste. Stir until well combined.
Fill your portobello mushrooms with your cooked Italian sausage and place them in the oven for 15 minutes. Remove form the oven and top them off with mozzarella cheese. Place them back in the oven for 5 minutes.
Garnish with some freshly chopped parsley and Enjoy!
