Preheat the oven at 400°F and turn on your waffle maker.
In a small bowl, mix in 1 large egg, 1 tbsp of almond flour, 1/2 cup of shredded mozzarella, 1 tbsp of grated parmesan, 1/8 tsp of Italian seasoning, and 1/8 tsp of garlic powder.
Add nonstick spray and sprinkle 2 tbsp of Mexican cheese on the hot waffle maker before placing the batter.
Add the batter and sprinkle the remaining Mexican cheese before closing the lid. Cook until the automatic timer or light goes off.
Place it on top of a prepared baking pan and spread 1 tbsp of tomato sauce evenly through the top of the chaffle.
Add your choice of toppings (I used mozzarella and pepperoni) and bake for 8 minutes. Enjoy!
