In a medium-size microwave safe bowl, place the 1 ½ cups of mozzarella and 2 tbsp of cream cheese. Microwave for 45 seconds. Mix with a rubber spatula and microwave again for 20 seconds.
Add 4 tbsp of monkfruit sweetener, 1 cup of almond flour, and 1 beaten egg. Mix with the spatula until all is well combined and no egg is showing.
Divide the mixture into 4 even pieces. Create long cylinders with each piece and create the pretzel twist.
Place in the parchment paper and bake for 15-20 minutes or until golden brown.
In a small bowl, mix 3 tbsp of melted unsalted butter, ½ cup of monkfruit sweetener, and 2 tbsps of ground cinnamon.
Cool the pretzel for 5 minutes before applying an even coat of cinnamon sugar.

In a small bowl, soften the cream cheese and sift the powdered monkfruit sweetener. Mix in the water and vanilla extract until smooth. Adjust water content for the desired consistency.
