How to Make Cauliflower Mashed Potatoes Keto

Thanksgiving just wouldn’t be the same without mashed potatoes and this keto friendly alternative has just added some life back to the table.

Ingredients
  

  • 24 oz cauliflower rice frozen or homemade
  • 1 tsp salt
  • 1/8 tsp black pepper
  • 1/2 stick unsalted butter melted
  • 1/3 cup water
  • 1/4 cup heavy cream
  • 1/2 tsp garlic powder

Instructions
 

  • Cook your frozen cauliflower rice following the directions of the bag. Make sure is fully cooked and defrosted. ( If using fresh cauliflower see notes***)
  • In a blender or food processor, place all your ingredients except for the butter.
  • Mix the 1/2 stick of butter by hand once all is blended. Serve with your favorite dish.

Notes

***If you're using fresh cauliflower, boil your cauliflower for 10 minutes. Strain all the water out and place inside the blender with the rest of the ingredients.
