Keto Chocolate Chip Cookie Recipe

This is an easy way to make delicious keto chocolate chip cookies. All you have to do is combine, whisk and scoop into the oven.

Ingredients
  

  • ½ cup unsalted butter (1 stick)
  • ¾ cup granular monkfruit sweetener
  • 1 tsp vanilla extract
  • 1 large egg
  • cup almond flour
  • ½ tsp baking powder
  • ½ tsp xantham gum (optional)
  • ½ tsp salt
  • cup sugar free chocolate chips or chopped chocolate

Instructions
 

  • Preheat a fan forced oven to 360°F.
  • Melt the butter in the microwave. Place the melted butter and monkfruit in a mixing bowl and beat until combined. Add the vanilla and egg, whisk until well combined.

  • Add the almond flour, baking powder, xantham gum and salt. Whisk one more time until the are no almond flour lumps.
  • Add in the chocolate chips and combine with a silicone spatula.

  • Use a small cookie scoop to divide and shape the dough into 15 portions and place on a lined baking tray. Bake for 10-12 minutes at 360F. Once the edges are brown, remove from the oven. They might look underdone at this point but they’ll harden when cooled.

Notes

If your cookies are not flattening after 5 minutes in the oven, you can manually press them down with a fork.
Store the keto chocolate chip cookies in an air tight container for up to 7 days.
