In a large skillet over medium heat, add olive oil, ground chicken, cumin, oregano, onion powder, paprika, salt, and pepper. Mix and cook completely while stirring occasionally.
For the pico de gallo, in a small mixing bowl, add tomato, bell pepper, cilantro, lime juice, hot sauce, salt, and pepper. Mix it all up and set it aside.
For the cilantro lime cauliflower rice, in a large skillet over medium heat, add olive oil, cauliflower rice, salt, and pepper. Cook until tender for about 7 minutes stirring often. Remove from the heat and add the cilantro and lime juice. Stir and serve.
To assemble add 1 cup of cauliflower rice, 1 cup of ground chicken, 1 scrambled or sunny side egg, 1/4 cup of cherry tomatoes, 1/2 sliced avocado, 1/4 cup of pico de gallo, and cilantro for garnish. Enjoy!
