2cupscauliflower rice (cooked with 1 tbsp olive oil and 1/4 tsp salt)
1cupdiced cucumber
1cupdiced tomato
3tbspred onion or shallot, diced
1/2cupparsley, chopped
3tbspfresh mint, chopped
1/4cupthinly sliced green onion
1/4cupolive oil
4tbsplemon juice
1clovegarlic, pressed or finely minced
1tspsalt
Instructions
In a large sauté pan over medium heat, add 1 tbsp of olive oil and cauliflower rice. Add 1/4 tsp of salt, and sauté for about 7 minutes or until just getting tender. Remove from the heat and set it aside to cool completely.
In a large bowl add, cucumber, tomato, parsley, mint, red onion or shallot, green onions, olive oil, lemon juice, garlic, salt, and cooled cauliflower. Mix together until fully incorporated. Enjoy!
