Jambalaya Cauliflower Rice

Ingredients
- 2 tbsp olive oil
- 3 links chorizo sausage, cooked and sliced
- 2 medium-size bell peppers, diced
- 1/4 cup onion, diced
- 1/4 cup celery, diced
- 3 garlic cloves, finely minced
- 1 lb. shrimp; peeled, deveined, tail off
- 4 cups cauliflower rice
- 1 cup tomatoes, diced
- 1/4 cup water
- green onions and fresh parsley diced for garnish
Cajun Seasoning
- 1 tbsp paprika
- 1/2 tsp garlic powder
- 2 tsp Italian seasoning
- 1 1/2 tsp salt
- 1 tsp cayenne pepper
- 1/2 tsp dried thyme
- 1/2 tsp onion powder
Instructions
- In a large pot over medium heat, add olive oil and onions. Sautee until translucent then add bell peppers, celery, garlic, and chorizo. Stir and add tomatoes and cajun seasoning. Stir until chorizo is completely cooked and veggies have slightly caramelized.
- Add water, shrimp, and cauliflower rice. Stir and cook for 5 minutes without lid and 10 minutes with lid on. Remove the lid and give it a stir. Serve with some fresh parsley or green onions and Enjoy!
