These peppers are my go-to lunch when I’m super busy or feeling lazy!  They’re incredibly easy to make and taste delicious every time.

Tuna Melt Stuffed Peppers

Ingredients
  

  • 2 bell peppers
  • 2 5 oz cans of tuna
  • 2 tbsp finely chopped onions
  • 1/4 cup finely chopped celery
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup mayo
  • 1 tbsp lemon juice
  • 2 tbsp freshly chopped parsley

Toppings

  • 1 cup mozzarella or cheddar cheese, grated
  • 2 tbsp freshly chopped parsley

Instructions
 

  • Preheat the oven to 350F/ 176C
  • Cut your bell peppers in half and remove the insides.
  • In a small mixing bowl, add tuna, chopped onions, chopped celery, black pepper, salt, mayo, lemon juice, and parsley. Mix until well combined.
  • Fill the peppers with the tuna mixture and place them in the oven for 15 minutes.
  • Remove from the oven and place the cheese on top. Place back in the oven for 5 minutes or until the cheese is melted. Sprinkle some fresh parsley on top and Enjoy!
