A Healthier Christmas

This recipe is kind of like the Christmas gift you didn’t know you needed!

It is my very own recipe for healthier, dopamine-inducing sugar-free Christmas Cookies!

The magic words are monkfruit cookies with keto icing, baked with so much love and happiness!

I remember when I first started experimenting with ingredients, trying to find the perfect recipe for the sugar free Christmas cookies I wanted to share with the world– the perfect blend of healthy and delicious!

It wasn’t as hard as it could have been. The keto diet has been around since the 1920s, when it was introduced by modern physicians as a treatment for childhood epilepsy.

And although this therapy hasn’t been used for this specific purpose with the advent of the modern era of antiepileptic drug treatment, it has largely become a thing again in 2020.

The keto diet is all about drastically reducing carb-intake in order to enter a state of ketosis. In this state, you are burning fat instead of glucose, for energy, which is what causes the weight loss.

It‘s one of the fastest and healthiest ways to lose weight.

Why Monkfruit Cookies?

Which is exactly why I chose monkfruit as an alternative to sugar! I’ve always been a health nut.

I love being fit and helping people lose their extra pounds. But, I also love to bake and share it with family and friends.

I couldn’t do one without the other. So I had to find a way to do both!

And monkfruit is a natural sweetener that lowers sugar levels– it is the perfect ingredient I wanted in my sugar free Christmas cookie recipe!

I remember when I first got to the states at 17. It was life-changing.

Certainly more than what I expected when I thought to uproot myself from Puerto Rico into the “greatest city in the world”, according Lin-Manuel Miranda’s Hamilton (I am a fan!)

I got into the tradition of making Christmas cookies when I was in college. It wasn’t the Noche Buena I was used to.

Yes, of course I missed the lechon, pasteles, arroz con gandules, tembleque, and more!

But it wasn’t so different, because I still had people to share it with. And my roommates loved it!

It is such a delight– watching people you love enjoying food you made.

And I am very lucky, because I still get to share it with my partner, today, while reminiscing about past Christmases.

When we were kids, we used to get excited about exchanging and opening gifts on Christmas morning, and lit up Christmas trees (and lawns!), aguinaldos, and of course, Santa!

Keto Icing for Cookies?

The challenge lies in the icing. Icing can’t be sugar free, can it? Yes, yes it can!

Keto icing sure sounds the same way as sugar free cookies– oxymoronic. But low-carb icing is not just not an oxymoron– it’s also very delicious!

And while there are so many alternatives to sugar we can choose from, I stuck with monkfruit not only for its natural sweetening, but also because it has fewer calories, which is what keto is all about.

I started this blog as a way to reach out to people and share whatever I’ve learned about healthy living and baking, the two things I like to do most in the world.

But I also wanted to encourage everyone to not only believe in people, but believe in themselves, as well. Losing those extra pounds is not impossible!

Staying fit is not improbable– even if you love cookies as much as I do!

We are living in a world where people continually strive to create and find healthier substitutes to everything unhealthy that we have gotten used to ingesting.

I realize that most people may be resistant to the idea, as most people are to change.

Sugar Free Christmas Cookie Recipe

Ingredients
  

Cookie

  • 2 cups + 2 tbsp almond flour
  • 1/4 tsp salt
  • 2/3 cup powdered monkfruit
  • 2 tsp vanilla extract
  • 2 tbsp cream cheese softened
  • 1/2 cup unslated butter softened

Keto Icing

  • 3 egg whites
  • 1 ¼ cup powdered monkfruit
  • 1/8 tsp xantham gum
  • Pinch of salt

Instructions
 

Cookies

  • Soften your butter by leaving it at room temperature for 2-3 hours or use the microwave setting for softening butter sticks.
  • In a large bowl, add 2 cups and 2 tbsp of almond flour, ¼ tsp of salt, and ⅔ cup of powdered monkfruit.
  • Beat with an electric mixer on medium speed. Add the ½ cup of butter tbsp by tbsp until it starts forming a crumble.
  • Add 2 tbsp of softened cream cheese to the mix and 2 tsp of vanilla extract. Mix until well combined.
  • Gather the dough until it all sticks together. Form the dough into a disk and tightly wrap with cling wrap. Let it chill for at least 30 minutes in the fridge.
  • Preheat the oven at 350F and line two baking sheets with parchment paper.
  • Prepare your rolling station with parchment paper, place the dough on the parchment and cover it with another large piece of parchment.
  • Roll on top of the parchment (to prevent sticking) until you reach an even flat layer of dough. (about ¼ inch thickness)
  • Cut the shapes and carefully lift the dough from the parchment. Place in your large baking sheets 1 inch apart.
  • Bake cookies for 11-14 minutes or until slightly brown on the edges.
  • Let them cool for 10 minutes without touching or moving. Then transfer them into a cooling rack.

Keto Icing

  • In a medium bowl, beat the 3 egg whites at high speed until frothy.
  • Add 1 ¼ cup of powdered monkfruit, ⅛ tsp of xantham gum, and a pinch of salt. Mix until stiff peaks form when lifting the whisk.
  • Color with gel food coloring and spread or pipe on your completely cooled cookies.

Notes

If having trouble handling the dough after cutting. Lift the shapes with a spatula instead of fingers.
