Ingredients
  

  • 1 tbsp olive oil
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1 garlic clove, finely minced
  • 1/4 cup shallot, chopped
  • 2 large pork sausages
  • 1 tsp spicy paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Toppings:

  • 1/2 Avocado
  • 1 fried egg
  • 1/4 cup Chopped tomatoes
  • Fresh chopped cilantro for garnish

Instructions
 

  • In a large sauté pan, over medium-low heat, add olive oil, chopped shallots, minced garlic, and let it cook for 1 minute or until softened while stirring occasionally. Then add bell peppers, spicy paprika, black pepper, and salt. Sautee until well combined and let it cook for 5 minutes.
  • Serve with a sunny side egg, chopped tomatoes, half an avocado, and garnish it with freshly chopped cilantro. Enjoy!
