Roasted Zucchini Bowl
This bowl is full of delicious flavors and a green sauce that is totally irresistible!

Ingredients
Roasted Zucchini
- 3 tbsp olive oil
- 1 tbsp fresh thyme
- salt to taste
- freshly ground black pepper to taste
- 4 medium size zucchinis, halved and cut into 1/2-inch pieces
Green Sauce
- 1 cup parsley
- 1 clove garlic
- 1/2 cup almonds
- 1 tbsp lemon juice
- 1/4 cup olive oil
- 1/4 tsp salt
Garnish
- 1/2 cup fresh mozzarella cheese
- 2 large slices of bacon
Instructions
- Preheat your oven to 350ºF (176ºC).
- In a parchment prepared baking sheet, place your cut zucchinis, drizzle with olive oil, sprinkle slat, and freshly ground black pepper. Toss them around to evenly coat them and roast in the preheated oven for 30 minutes.
- To make the green sauce, in a blender, add parsley, garlic, salt, olive oil, lemon juice, and almonds. Blend until smooth.
- To prep the bowl, add half of your fresh mozzarella to the bottom of the bowl, zucchini, topped with green sauce, bacon, and fresh thyme. Enjoy!
