It’s this creamy, salty, sweet, nutty and earthy spread that works its magic almost as soon as it touches your tongue.
It explodes into your mouth in such a way that takes away all troubles.
But it’s not all creamy goodness and delight, it’s also one of the healthiest snacks in keto!
In moderation- maybe a couple of tablespoons of all natural peanut butter- it most definitely won’t damage your keto diet. And it’ll make you very happy!
Since it’s one of those perfect keto snacks, it’s only natural to create a flavor with it for our keto peanut butter breakfast.
Peanut butter in and on pancakes- what could go wrong?

To be completely honest, I had the the idea to make my own low carb peanut butter pancakes when I discovered this awesome and deliciously sinful chocolate syrup!
It was a match made in heaven! Surely this chocolate syrup was made just for my keto peanut butter breakfast pancakes!
It was an explosion of favorite flavors inside my mouth.
Peanut butter wasn’t always a favorite of mine growing up, but then I discovered keto desserts!
You guys know I go crazy for chocolate. And I did go crazy, especially with this peanut butter and chocolate combination.
Of course, I have to say, this sugar free chocolate syrup is not just the perfect complement to my low carb peanut butter pancakes, it’s a partner topping for almost everything!
You can drown your food with it to make it more delicious and appealing and I am not going to stop you (maybe I will, once), because I’d want to do the same thing too.
This chocolate syrup is so sinful, it ought to be banned, for the safety of all, of course, but more for mine.
It’s an addiction. An affliction. I just can’t help myself. It’s too good!

Do Not Overcook
This is a warning I almost always include in most of my recipes, and I stand by it, especially with these keto peanut butter breakfast pancakes.
These cook faster than regular pancakes, and I don’t want you disheartened after eating an overcooked and dry peanut butter pancake.
It’s an experience only when perfected.
Once you’ve poured the mix onto your heated skillet, give it around three to four minutes until you see some bubbles here and there.
Then, you can check underneath if it’s lightly browned and if the pancake has achieved its perfectly puffy look.
Once it has, you can flip it and allow the other side to cook for around two to three minutes.
Just make sure you don’t undercook it that it falls apart, or overcook it that it dries out.

Either way, I’m sure you will see Valhalla, or Heaven, or Eden, or Elysium, or all of them at once. Yes, I’m pretty certain.
Substitute For Sugar In Pancakes
What are some substitutes for sugar in pancake recipes? I’m sure you know that I prefer Monkfruit sweetener.
It’s perfectly sweet without the aftertaste other people claim alternatives have, which is easily recognizable in pancake batter.
It’s healthy and perfectly natural, albeit a little hard to come by.
Another substitute for sugar in pancakes option is erythritol-a sugar alcohol that is naturally derived from plants and fruits.
It doesn’t affect the blood sugar levels of most people, which is why this is very popular with people with diabetes.
It’s 70% as sweet as sugar, though, so you have to make sure to adjust accordingly.
And, it doesn’t have a bitter or chemical aftertaste, either!
Stevia is also an option. It was my go to alternative before I discovered monkfruit.
It has the same health benefit as monkfruit, although some people claim an unpleasant aftertaste.
Personally, I think stevia is a good substitute for some recipes.
The aftertaste is something that, in my experience, all substitutes have, when you have added too much in the mixture, or batter, in this case.
That said, you can also use Sucralose, Xylitol, etc., it’s totally up to you!
You can experiment a bit with these substitutes for sugar in pancakes to find out which one you are most comfortable with.

Chocolate Chip Low Carb Peanut Butter Pancakes

- 1 cup almond flour
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/2 tsp baking powder
- 1 tsp vanilla extract

- 1/4 cup monkfruit sweetener
- 2 tbsp organic peanut butter
- 5 tbsp ChocZero milk chocolate chips
Toppings
- 1 tbsp ChocZero milk chocolate chips

- 2 tbsp whipped cream
Instructions
- On a medium size bowl, separate and beat the egg whites until stiff peaks.
- On a separate bowl, beat the 2 egg yolks, ¼ cup of unsweetened almond milk, ¼ cup of monkfruit sweetener, 2 tbsp of organic peanut butter, 1 tsp of vanilla extract, and 1 cup of almond flour. Mix until well combined.
- Fold the eggs into the batter very carefully. This will incorporate air for fluffy pancakes. Do so until fully incorporated.
- On low heat, use a large skillet and add 1 tbsp of unsalted butter. Wait for it to melt and then scoop the batter into the pan.
- Cook at low heat for about 4 minutes or until slightly golden. Add chocolate chips before flipping. Flip and cook for 3-4 minutes
