In a small bowl, mix together olive oil, salt, pepper, and optional lemon juice. Mix it well and pour at the bottom of your jars.
Place the veggies with most moisture at the bottom and work your way up to the feta cheese and leafy greens. This will ensure your salads stay fresh for longer.
Close the lid and refrigerate until eating. For eating, simply empty the jar on a plate, mix and Enjoy!
