Ingredients
  

  • 3 cups of packed fresh spinach
  • 1 cup chopped cherry tomatoes
  • 1/4 cup carrot shaving
  • 3/4 cups purple cabbage, thinly sliced
  • 3 small cucumbers, sliced
  • 1/2 cup feta cheese

Dressing

  • 3 tbsp olive oil
  • salt and pepper to taste
  • 1 tsp lemon juice *optional

Instructions
 

  • Wash and cut all your veggies. Set aside.
  • In a small bowl, mix together olive oil, salt, pepper, and optional lemon juice. Mix it well and pour at the bottom of your jars.
  • Place the veggies with most moisture at the bottom and work your way up to the feta cheese and leafy greens. This will ensure your salads stay fresh for longer.
  • Close the lid and refrigerate until eating. For eating, simply empty the jar on a plate, mix and Enjoy!
