After being forced to look away from Aunty Ann’s delicious pretzel selection, I couldn’t help but make a sugar free pretzels cinnamon treat to combat my pretzel cravings!

For me pretzels are the perfect snack, and always seem to remind me of fun times at the mall. 

I mean, let’s be honest, who hasn’t repeatedly gotten free samples of Aunty Ann’s delicious pretzels (I definitely did!)

As a pretzel fanatic, I had to see whether a sugar free pretzels recipe was actually possible for keto.

Lucky it is! Fathead dough is used as the integral ingredient that makes these carb free pretzels a reality. 

It’s frankly just as good or dare I say, better than traditional pretzels!

A carb free pretzels recipe was long overdue on my blog, not only because I LOVE soft baked pretzels, but also because my blog’s very logo is a pretzel!

1. Mix with a rubber spatula from the beginning.

The rubber spatula prevents sticking and is better than working hot dough with your hands.

 

2. The dough should be a uniform color.

If you see lumps of almond flour (yellow spots) then you’ll need to keep mixing. If it’s getting tough to mix, place back in the microwave for 20 seconds and keep mixing.

 

3. Only form the dough when it’s warm.

If the cheese cools down it won’t stretch, resulting in lumpy and broken shapes.

Ingredients
  

  • cups shredded mozzarella
  • 2 tbsp cream cheese
  • 1 cup almond flour
  • 1 egg beaten
  • 4 tbsp monkfruit sweetener

Cinnamon Sugar Coating

  • 3 tbsp unsalted butter
  • 1/2 cup monkfruit sweetener
  • 2 tbsp ground cinnamon

Cream Cheese Glaze

  • 2 tbsp cream cheese softened
  • 1 tbsp powdered monkfruit
  • 2 tbsp water room temperature
  • 1/4 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350F.
  • Line a baking pan with parchment paper. Put aside
  • In a medium-size microwave safe bowl, place the 1 ½ cups of mozzarella and 2 tbsp of cream cheese. Microwave for 45 seconds. Mix with a rubber spatula and microwave again for 20 seconds.
  • Add 4 tbsp of monkfruit sweetener, 1 cup of almond flour, and 1 beaten egg. Mix with the spatula until all is well combined and no egg is showing.
  • Divide the mixture into 4 even pieces. Create long cylinders with each piece and create the pretzel twist.
  • Place in the parchment paper and bake for 15-20 minutes or until golden brown.
  • In a small bowl, mix 3 tbsp of melted unsalted butter, ½ cup of monkfruit sweetener, and 2 tbsps of ground cinnamon.
  • Cool the pretzel for 5 minutes before applying an even coat of cinnamon sugar.

Cream Cheese Glaze

  • In a small bowl, soften the cream cheese and sift the powdered monkfruit sweetener. Mix in the water and vanilla extract until smooth. Adjust water content for the desired consistency.
