The inspiration behind this recipe is really close to my heart.

I remember my mom sharing this family recipe back in Puerto Rico with me and we would have a hot rich and creamy cup of chocolate with Gouda cheese during the cold and rainy nights. (Yeah, you read that right, GOUDA!)

Traditionally, Puerto Ricans have a habit of putting gouda cheese in their hot chocolate after it has been served.

The cheese melts but doesn’t mix with the chocolate which gives you the perfect consistency to dip soft warm buttery bread in your hot chocolate and scoop it all out!

Kind of similar to fondue, but with a touch of sweetness from the chocolate!

I know what you’re thinking, ‘that’s kind of strange’, but don’t you think sometimes the strangest things make the best combinations! (think marshmallow sweet potato, chocolate & bacon, turkey and raspberry jam, anything sweet AND salty – I LOVE all these combinations! ).

Ingredients
  

  • 1.5 oz 100% dark unsweetened chocolate bar
  • 2 cups unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/8 tsp ground cinnamon
  • 2/3 cup sweetener (I use erythritol)

Instructions
 

  • Into a large saucepan, over medium-low heat, add unsweetened almond milk, unsweetened cocoa powder, 100% unsweetened dark chocolate (I use pure unsweetened cacao mass), and sweetener (I’m using erythritol).
  • Whisk it up together carefully until the chocolate has melted into the milk. Whisking constantly so the chocolate doesn’t set at the bottom and begin to burn.
  • Add cinnamon powder, and vanilla extract. Whisk it up until the mixture is completely smooth without bits of chocolate. Turn the heat off and serve immediately. You can serve this with some sugar-free whipped cream and a sprinkle of cocoa powder. Enjoy!
