I never thought I would find myself craving sushi so much. Before the quarantine, I used to order take out often, but like most of us right now, I find myself cooking a lot more.
Sushi was my first choice take out option, but since we’re staying at home most of the time, I decided to roll up my sleeves and get creative. Really happy I did, because keto friendly sushi was the special something I needed!
These keto friendly sushi rolls have made my quarantined life complete.
As you may know by my bio description, my boyfriend is the keto eater in our house, so I had decided to make all our main meals low carb, and sushi was no exception. I was up for the challenge! So first, I gathered the ingredients.
Keto Friendly Sushi Ingredients:
Cauliflower Sushi rice
- 24 oz frozen cauliflower rice
- 1/4 cup regular or whipped cream cheese
- 3 tbsp of rice vinegar
- 1/2 tsp salt
Smoked Salmon Roll
- 1 avocado
- 1 smoked salmon pack
- Half a cucumber
Spicy Tuna Roll
- 2 cans of 4 oz. tuna
- 1 tbsp mayo
- 3 tsp sriracha
- Pinch of salt
Spicy Mayo
- 1/3 cup mayo
- 1 tbsp sriracha
- 2 tbsp water
Then I had to get sushi-making tools. I went to Amazon and ordered a sushi making kit and some nori seaweed. (Links to the products I got)
So, I did my research on how to make sushi and these are the things I learned:
Make your sushi rice sticky
Since we can’t use actual rice for our keto friendly sushi, I had to make sure my cauliflower rice was nice and sticky. I decided to add cream cheese and a typical sushi rice ingredient, rice vinegar.
The rice vinegar made it taste less like cauliflower, and more like rice but notice I didn’t put a lot because this ingredient has a significant amount of carbs when you are considering keeping it as low carb as possible.
Plastic wrap your sushi mat
Find cling plastic wrap and cover your sushi mat. This prevents the mat from getting dirty which helps your rolls look nice and clean. Plus you don’t have to clean the mat afterwards!
Keep it simple
When starting to make sushi at home, it’s better to keep it simple. The less ingredients you have the better to roll the sushi. As such I chose the following sushi-like keto ingredients: salmon, tuna, avocado, and cucumber. Simple, fresh, and absolutely delicious!
Leave nori space when spreading the rice
Leave about 1/2 inch around the nori when spreading the rice as the nori needs space to stick to itself when finishing the roll.
Do not overstuff the roll because it’ll spill out of the sides when rolling. It happened to me with my first roll, and it wasn’t pretty.
Keep the keto friendly sushi rolls tight when rolling
It’s better to go slow for the first couple of rolls. Once you get the hang of it, it’ll become easier. Each roll was rolled and tightened every couple of inches until completed.
When cutting…
Use a very sharp knife. Avoid squeezing the roll with your hand when holding it to cut. For best results, try to cut as fast as possible without breaking the circular shape.
Don’t worry if the ends are not looking good when you cut them, it happened to me too! This happens because there is not a lot of structure on the sides to keep the roll together.
I had so much fun making these sushi rolls for the first time. It’s so satisfying when you get to make something you love and have been craving for so long. I know you will enjoy these keto friendly sushi rolls as much as I did.

Keto Friendly Sushi | Spicy Tuna Roll and Smoked Salmon Roll

- Sushi-making kit
- Frying Pan
Ingredients
- 6 pieces nori sheets
Cauliflower Sushi Rice
- 24 oz frozen cauliflower rice
- ¼ cup regular or whipped cream cheese
- 3 tbsp rice vinegar
- ½ tsp salt
Smoked Salmon Roll
- 1 small avocado
- 8 oz smoked salmon
- Half cucumber
Spicy Tuna Roll
- 8 oz canned tuna
- 1 tbsp mayo
- 3 tsp sriracha
- Pinch of salt
Spicy Mayo
- ⅓ cup mayo
- 1 tbsp sriracha
- 2 tbsp water
Instructions
Cauliflower Sushi Rice
- In a frying pan, add 3 tbsp olive oil and cook your cauliflower rice on medium heat. Add salt to taste.
- Remove the cauliflower from the pan and place in a bowl. Add cream cheese and rice vinegar.
Spicy Tuna Mix
- Open your cans of tuna and remove all liquid from it.
- Add mayo, sriracha, salt, and combine well.
Smoked Salmon Roll
- Cut your avocado and cucumber into thin slices.
- Prepare your smoked salmon by separating the already cut slices from the pack.
Spicy Mayo
- In a small bowl, combine mayo, water, and sriracha. Mix well.
Assembly
- Cover your sushi mat with cling wrap.
- Place the nori on to of your sushi mat.
- Spread the cauliflower rice leaving 1/2 inch of nori exposed all around.
- Place your filling in the center of the rice forming a line.
- Roll the sushi by tucking in the filling and firmly pressing without squeezing the roll.
- Cut immediately or leave in the fridge to rest before cutting.
- Add a drizzle of spicy mayo and serve with a side of soy sauce.
