Who knew cauliflower rice could be so versatile?! Well, I didn’t! I used to prepare non-keto rice pudding all the time, though now I wanted to make a keto version that was just as good!

Keto cauliflower rice pudding crossed my mind and I began testing the different ways I could make it taste just like regular rice pudding. 

My tests were successful, as I couldn’t believe how delicious it turned out. Now it’s most definitely one of my go-to desserts.

What is cauliflower rice?

Cauliflower rice is basically cauliflower thrown in a food processor, broken down into small pieces resembling rice.

The texture is a perfect substitute for anything that contains actual rice in the recipe. Even better is that it’s low carb, and cooks very fast.

Why unsweetened almond milk instead of whole milk?


Unsweetened almond milk has way fewer carbs than whole milk. It also makes this recipe completely dairy-free.

You could use coconut milk as a low carb option, but keep in mind that coconut milk has more carbs than almond milk.

What does it mean to temper eggs?

Tempering Eggs is the process of slowly warming the eggs before introducing them to your recipe, so they mix smoothly.

For example, if you have a hot pot of milk and stir in eggs, you’ll end up with little scrambled egg bits in the milk instead of a smooth mixture.

Keto Cauliflower Rice Pudding

Ingredients
  

Vanilla Cinnamon Cauliflower Rice Pudding

  • 2 ½ cups unsweetened almond milk
  • ½ cup monkfruit sweetener
  • 1 tsp cinnamon
  • 2 cups cauliflower rice
  • 2 large egg yolks beaten
  • 1 tsp vanilla extract

Chocolate Cauliflower Rice Pudding

  • 2 cups unsweetened almond milk
  • ¼ cup + 2 tbsp monkfruit sweetener
  • 1 ½ cups cauliflower rice
  • 2 large egg yolks beaten
  • cup dark chocolate powder
  • 1 tsp vanilla extract

Instructions
 

  • In a small sauce-pan on medium heat, pour the unsweetened almond milk. Wait for it to simmer. 
  • Add the monkfruit sweetener, cauliflower rice, cinnamon, and vanilla extract. Stir until combined. 
  • In a small mixing bowl, beat the egg yolks. 
  • To temper egg yolks, add a small amount (2-3 tbsp) of the warm milk mixture while whisking at the same time. Whisk it for a couple of seconds and add them to the sauce-pan. 
  • Whisk non-stop until thickened. If you stop whisking the mixture, it will curdle. Do so for about 5-7 minutes, or until thickened. 
  • Let it cool before serving. 

Notes

Want to make chocolate keto cauliflower rice pudding? Just follow the instructions above, but substitute dark chocolate powder for cinnamon in step 2.
This keto cauliflower rice pudding can be stored in the refrigerator in an airtight container for up to 7 days.
