That’s because we started with a fathead dough recipe (renowned for its incredible texture) and infused it with Italian flavors, garlic, and Italian seasoning to make the best keto garlic bread without cream cheese!
This keto garlic bread without cream cheese recipe is gluten free. However, it’s recommended that you read the labels on the ingredients you buy to confirm that they were processed separately from any gluten-containing goods.
This keto cheese bread is made with almond flour to imitate typical cheesy pull-apart bread. I think it’s more enjoyable to eat, and also super satisfying to add the cheese topping to melt in the oven!
For this keto garlic bread, we’ll make our own dough, roll flat, sprinkle it with herbs, bake it, and then cover it with more cheese and garlic, then bake again. Sure, it will take a few minutes longer to prepare, but the result will be a finger-licking garlic bread you just won’t be able to stop eating.
For those of us who enjoy sweet foods, especially baked goods, the keto diet can be challenging! Baking using almond flour and coconut flour is beneficial, but these flours are difficult to transform into chewy, “gluten-esque” breads and cakes.

What is fat head dough?
Can we all agree that the best thing ever is fathead dough? The basic ingredients (coconut or almond flour, mozzarella cheese, and eggs) can be used to make almost any bread-based dish. The list continues! Fathead pizza crust, donuts, bagels, pretzels, cinnamon buns, pigs in a blanket…
With a few recipe changes and all of the garlic bread extras, I’ve created keto garlic cheese sticks that can be paired with a keto-friendly “pasta” dish, dipped in a keto-friendly sauce, or enjoyed on their own. It’s an excellent side dish or appetizer and can be created with items you most likely already have on hand.
You may have heard the term “fathead dough” while referring to mozzarella dough. That’s because Tom Naughton, the director of the Fathead film, renamed it and popularised it among the keto community.
The beautiful thing about fat head dough is that it has a low net carb count. Tom and his family set out to disprove the long-held belief that a low-fat diet is the healthiest by inventing the first “Fathead” pizza.

Fathead dough is made up of four key ingredients:
Cream cheese (which we’re omitting), mozzarella cheese, almond flour, and egg. From there, you can experiment with different types of low carb flours and/or seasonings, such as our keto garlic bread.
It all starts with a microwave melt of shredded mozzarella. It only takes a minute or two — that’s fast! Then, combine almond flour and a beaten egg. Mix thoroughly. While the dough is still warm, using a rubber spatula knead it with your hands to smooth it out.
The moisture content of different types of mozzarella – and whether it is pre-shredded – is usually the cause of variance in the stickiness of the dough.
Rolling the dough underneath a large sheet of parchment paper it’s the best way to flatten it evenly without having it stick to your hands or your rolling pin.

Is Garlic keto?
It sure is! Garlic has a modest carbohydrate content, with less than 1 gram of net carbs per clove. And the value per serving is insignificant.
Because garlic is often used to add taste rather than bulk to recipes, the carbs in garlic are unlikely to exceed your macronutrient requirements. Even if you add a lot of garlic to your recipes, it usually won’t have a big impact on your daily macros.
Just don’t devour an entire head of garlic at once! When used to flavor food, the carbs in garlic are dispersed throughout the dish and have an even smaller impact on your daily macros.

Salt– To season the bread, use salt.
Italian seasoning– For even more flavor!

Tips for Making the Best Keto Garlic Bread
Before adding the egg, gently knead the mixture until it becomes a firm, thick dough. To make it simpler to blend, make sure the cheese is totally melted. If the dough gets tough to mix, place bak in the microwave for 30 seconds. Then continue mixing.
Incorporate the egg rapidly after mixing the dough. The dough needs to be hot in order for the egg to mix in. Work quickly and knit vigorously until you have a smooth dough. Once you have added the egg it’ll no longer be possible to place it in the microwave as the egg will cook.
Shape the dough quickly after mixing, the longer it sits the harder it’s to shape.
Ways to serve keto garlic bread
Pizza- Serve with keto fathead pizza. With some marinara sauce on the side, you’ll have a homemade Italian takeout!
Salad– Taking the salad as a side dish to the next level. This is delicious with broccoli salad and egg salad.
Protein– Serve with pan-seared salmon or chicken tenders.
Garlic Bread Storage and Freezing
To store: Covered leftover garlic bread can be kept in the refrigerator for up to 1 week.
To freeze: Place the keto garlic bread in a ziplock bag and place it in the freezer for up to 6 months. Thaw in the refrigerator overnight.
To reheat, either microwave the garlic bread for 30 seconds or bake for 10 minutes at 180C/350F.

Cheesy Fat Head Dough Garlic Bread
Ingredients
- 1 3/4 cups mozzarella, shredded
- 3/4 cup almond flour
- 1/2 tbsp Italian seasoning
- 1/2 tbsp garlic, minced
- 1 tsp baking power
- 1/2 tsp salt
- 1 whole egg
Cheesy Topping
- 1/2 cup mozzarella, shredded
- 1/2 tbsp garlic, minced
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 375F.
- Place all the ingredients apart from the egg, in a microwaveable bowl. Stir gently to mix together. Microwave for 1 minute.
- Stir and microwave for another 30 seconds or until fully melted.
- Add the egg then mix fast until smooth and fully incorporated to make a cheesy dough.
- Place on a parchment-prepared baking tray and form into a garlic bread shape.
- Bake at 375F for 10 minutes. Take out and spread 1/2 tsp minced garlic and mozzarella cheese then place back in the oven for another 7 minutes or until cheese is golden brown. Add some fresh chopped parsley and slice. Enjoy!
