Egg Salad

Egg salads are a classic for a reason and this version is my absolute favorite!

Ingredients
  

  • 12 large eggs hard boiled
  • 1/4 cup green onions chopped
  • 2 tbsp red onion diced
  • 1/2 cup mayonnaise
  • 2 tsp mustard yellow or dijon
  • 3 tbsp dill pickle diced
  • 1 tsp paprika
  • 3/4 tsp sea salt
  • 8 large lettuce leaves for serving

Instructions
 

  • Boil the eggs and peel let them cool completely. Add them to a bowl and mash them up with a fork. Then add green onions, red onion, dill pickle, mayo, mustard, paprika, and salt. Mix well until fully incorporated. Serve on a lettuce wrap and enjoy!
