Cheesy Spinach Chicken Bake

Ingredients
- 5 boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 cup chopped spinach
- 4 oz cream cheese, softened
- 1/3 cup heavy cream
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/3 tsp grated parmesan cheese
- 1 cup mozzarella cheese
- 1 tbps fresh chopped thyme for garnish
Instructions
- Preheat the oven to 425F / 218C
- Add softened cream cheese, chopped spinach, heavy cream, parmesan cheese, salt, thyme, garlic powder, onion powder, and black pepper to a large mixing bowl. Combine until is all fully incorporated.
- In a baking pan, add your chicken breasts, olive oil, pinch of salt and pepper. Then mix it to evenly distribute the seasoning. Place the cheesy spinach mixture on top of the chicken and spread it out evenly covering the surface.
- Top it off with mozzarella cheese and place in your preheated oven at 425F for 25 – 30 minutes or until you reach an internal temperature of 165ºF in the thickest part of the chicken.
- After is fully baked, top it off with some freshly chopped thyme and enjoy!
