Ingredients
Cilantro Lime Rice
- 1 tbsp olive oil
- 2 cups cauliflower rice
- 1 tbsp cilantro
- salt and pepper to taste
- 2 tsp lime juice
Chicken
- 1 tbsp olive oil
- 1 lb ground chicken
- salt to taste
- 1 tsp ground cumin
- 1 tsp oregano, dried
- 1/2 tsp onion powder
- 1 tsp paprika
Eggs
- 2 large eggs
- Salt and pepper to taste
Pico de Gallo
- 1/4 cup diced tomatoes
- 1/4 cup diced red bell pepper
- 2 tbsp fresh cilantro, chopped
- 1 tsp lime juice
- 1/4 tsp hot sauce
- salt and pepper to taste
Additional Toppings
- 1/2 cup cherry tomatoes halved
- 1 avocado sliced
- Cilantro for garnish
Instructions
- In a large skillet over medium heat, add olive oil, ground chicken, cumin, oregano, onion powder, paprika, salt, and pepper. Mix and cook completely while stirring occasionally.
- For the pico de gallo, in a small mixing bowl, add tomato, bell pepper, cilantro, lime juice, hot sauce, salt, and pepper. Mix it all up and set it aside.
- For the cilantro lime cauliflower rice, in a large skillet over medium heat, add olive oil, cauliflower rice, salt, and pepper. Cook until tender for about 7 minutes stirring often. Remove from the heat and add the cilantro and lime juice. Stir and serve.
- To assemble add 1 cup of cauliflower rice, 1 cup of ground chicken, 1 scrambled or sunny side egg, 1/4 cup of cherry tomatoes, 1/2 sliced avocado, 1/4 cup of pico de gallo, and cilantro for garnish. Enjoy!
