Breakfast Quesadilla

This breakfast quesadilla is super fresh and extremely low carb without sacrificing that cheesy satisfying quesadilla taste.

Ingredients
  

  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup bell peppers, chopped
  • 2 large eggs
  • Pinch of salt and pepper
  • 2 tbsp chopped tomato
  • 1 slice of bacon
  • 2 thin slices of avocado
  • Fresh cilantro leaves

Topping:

  • 2 tbsp sour cream
  • 2 thin slices of avocado
  • Fresh cilantro leaves

Instructions
 

  • Preheat your oven to 350F/176C.
  • Add shredded mozzarella cheese and cheddar cheese to a parchment-prepared baking pan. Make a circle shape to create that signature tortilla look. Then, bake at 350F or 176C for 8 minutes or until melted and slightly browned on the edges.
  • While that melts, add olive oil to a frying pan over medium heat. Then, add chopped bell peppers. Season it with a pinch of salt and a crack of pepper, then add 2 eggs and mix it all up until it cooks.
  • Take your cheese out of the oven and let it cool for 5 minutes and dab a paper towel on top to remove excess fat. Then let it cool down until it’s slightly warm and pliable.
  • Add the scrambled eggs to one half of the circle with chopped tomatoes, 1 slice of crispy bacon, a few slices of avocado, and cilantro. Then fold it, cut it and enjoy your breakfast quesadilla with a dollop of sour cream, more avocado, and cilantro.
