I used to eat snickers A LOT! They are clearly one of those things that I couldn’t stop myself from grabbing whenever I needed a snack.
So I thought, what if I created my own version of a snickers bar? Maybe even sugar free brownie snickers!
Something people can nibble on whenever they get hungry, but without the accompanying calories?!
And here’s the result, a delicious layered brownie with balanced flavors that are totally irresistible.
Keto Brownie Snickers Ingredients:
Brownie Batter Mix
- 1/2 cup unsalted butter melted
- 2/3 cup monkfruit
- 3 large eggs
- ½ teaspoon vanilla extract
- ½ cup almond flour
- 1/3 cup cocoa powder
- 1 tbsp unflavored gelatin
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1/4 cup water
Peanut Butter Fudge
- 3/4 cup unsweetened peanut butter
- 6 tbsp unsalted butter
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 3/4 cup powdered monkfruit
Keto Caramel
- 1/4 cup unsalted butter
- 3 tbsp monkfruit
- 2 tbsp NuNaturals Salted Caramel Syrup
- 1/4 cup heavy cream
- 1/4 tsp xanthan gum
Chocolate Coating
- 8 oz unsweetened dark chocolate bar
- 1 tsp coconut oil
- ¼ cup powdered monkfruit

When I first thought about creating my own carb free brownie snickers, I admit, I had some reservations. I didn’t think it was possible, frankly, to have healthy, low carb candy, plus a chocolaty brownie layer.
It’s a testament to the advancement of the times, and people’s constant struggle to improve themselves (and their health), as well as my eternal belief that anything is possible, that I was able to pull this off.
After I rolled the idea around my head and worked at it for weeks, I finally thought, yes, I could make this healthier– so ketoers like me could enjoy it without feeling bad after.
Let’s face it, a snickers bar is pure, awesome goodness in and of itself! I didn’t think I could improve much on this confectionary perfection.
What Are Keto Brownie Snickers?
A snickers bar (the candy) is nougat-based, topped with roasted peanuts and caramel goodness, dipped and covered in milk chocolate. Yes, it’s a heavenly masterpiece.
My keto brownie snickers are just about the same, with a few delicious tweaks! The base for my awesome, high inducing, low carb snack is a baked brownie layer, topped by keto caramel, peanut butter fudge, and finally, chocolate coating!

The Healthy Way To Eat Your Way To Brownie Heaven
Apart from being delicious and worthy of adulation, my keto brownie snickers are also healthy!
I am going to take creative licence and assume you now are asking me questions like– What? How? The answer is simple! Make it keto!
My keto diet calls for a minimal intake of carbs per day and, to make that happen while keeping me happy, I have to find substitutes to the ingredients that are unhealthy, but which we have relied on for ages.
I use almond flour, cocoa powder, and monkfruit for my brownie base. Butter is the only thing I don’t substitute in creating my keto brownies (it’s perfect for keto afterall).
It plays such an important role and there is just no way to replace it without compromising the taste or consistency of my brownie base.
My sugar free fudge is created using all natural peanut butter, vanilla extract, a bit of salt, some butter, and monkfruit.

Keto Brownie Snickers
Ingredients
Brownie Batter Mix
- 1/2 cup unsalted butter melted

- 6 tbsp unsalted butter
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 3/4 cup powdered monkfruit
Keto Caramel
- 1/4 cup unsalted butter
- 3 tbsp monkfruit
- 2 tbsp NuNaturals Salted Caramel Syrup
- 1/4 cup heavy cream
- 1/4 tsp xantham gum
Chocolate Coating
- 8 oz unsweetened dark chocolate bar
- 1 tsp coconut oil
- 1/4 cup powdered monkfruit
Instructions
Brownie
- Preheat the oven to 350F.
- Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, whisk together ½ cup of unsalted melted butter, ⅔ cup of monkfruit sweetener, 3 eggs, and ½ a teaspoon of vanilla extract.
- Add a ½ cup of almond flour, ⅓ cup of cocoa powder,1 tbsp of unflavored gelatin, ½ tsp of baking powder, and ¼ tsp of salt and whisk until well combined. Stir in the ¼ cup of water for a better consistency.
- Spread the batter in the lined baking pan. Bake for 20 minutes, until the edges are set and the center slightly wet.
- Let it cool in the pan until completely firm.
Peanut Butter Fudge
- In a medium saucepan over medium heat, stir and melt together ¾ cups of unsweetened peanut butter and 6 tbsp of unsalted butter. Add in ½ a teaspoon of vanilla extract and ¼ teaspoon of salt.
- Mix in the ¾ cup of powdered monkfruit sweetener a little at a time. Spread over cooled brownies and refrigerate for 45 minutes, until completely firm.
Keto Caramel
- In a medium saucepan over medium heat, combine ¼ cup of butter, 3 tbsp of monkfruit sweetener, and 2 tbsp of NuNaturlas’ Salted Caramel Syrup. Bring to a boil and cook for 3 to 5 minutes until golden brown.
- Remove from heat and add ¼ a cup of heavy cream. The mixture will bubble a lot.
- Add ¼ tsp of xanthan gum and whisk fast to combine.
- Return mixture to heat and boil for 1 more minute. Let cool until spreadable and spread over the peanut butter fudge layer.
Chocolate Coating
- In a medium microwave-safe bowl, add 8 ounces of chopped Bakers chocolate. Melt in the microwave at 40-second intervals, stirring every 40 seconds until completely melted.
- Add 1 tsp of coconut oil and ¼ cup of powdered monkfruit. Stir until smooth.
- Pour over the completely set caramel layer.
- Wait for it to set and cut into 9 squares.
